How to Make Perfect Roast Potatoes: Crispy Outside, Fluffy Inside
There is something special about a tray of golden roast potatoes. The outside should be crisp, the middle soft and fluffy, and every bite full of flavour. Here is a straightforward way to make roasties at home.
1. Pick a floury potato
Maris Piper and King Edward potatoes are excellent choices. Their fluffy texture helps you get those crisp edges.
2. Cut into even pieces
Similar-sized pieces cook at roughly the same rate. Leave enough surface area for those lovely golden edges.
3. Parboil first
Simmer in salted water until the outsides begin to soften. Drain thoroughly.
4. Rough up the edges
Give the drained potatoes a gentle shake in the colander. The fluffy surface turns deliciously crisp in the oven.
5. Preheat the tray
Heat the oven to around 200°C fan (220°C conventional) and warm a suitable roasting oil in the tray. Add potatoes carefully: hot oil can spit.
6. Give them room
Spread the potatoes in a single layer and turn during roasting. Cook until golden and tender, typically around 40–55 minutes depending on size and oven.
7. Finish with flavour
Try rosemary, garlic, black pepper or a little sea salt. For a hearty takeaway alternative, explore the Spud Box menu.

Best Potatoes for Roasting in the UK: Maris Piper or King Edward?
Not every potato roasts in quite the same way. Floury potatoes usually make the fluffiest centres and crispest edges.
Maris Piper
A dependable choice for classic roasties. The soft, floury flesh responds well to parboiling and roughing up.
King Edward
Another favourite for golden roast potatoes, with a lovely fluffy centre.
What about new potatoes?
New potatoes are waxier, so they hold their shape and have a different bite. They are delicious with butter, herbs or a lighter dressing, even if they will not roast like a floury potato.
Our tip
Whichever you choose, dry the potatoes well and avoid crowding the roasting tray. At Spud Box we offer roast, jacket and new potato dishes, so you can choose the style you fancy.

Why Aren’t My Roast Potatoes Crispy? 7 Easy Fixes
If your roasties are soft rather than crunchy, a few small changes can help.
Seven things to check
- Wrong variety: try a floury potato such as Maris Piper.
- Too much water: let the potatoes steam dry after draining.
- Smooth edges: gently rough them up after parboiling.
- Cold roasting tray: preheat the tray and cooking fat.
- Overcrowding: leave room for hot air to circulate.
- Not turning: turn once or twice for even colour.
- Taking them out too early: cook until the edges are properly golden.
